[my.eyes,your.land] Summer Calm1 packet of crushed tomatoes, 1 tin of coconut milk, 2 tins of tuna (whatever is available), plenty of thinly sliced chorizo, 1 medium onion, 1 tbsp thai red curry paste, freshly chopped garlic and ginger, 1 diced red pepper, baby corn or whatever is left in the veg bag. Fry the onions, then toss in the chorizo followed by everything else. Simmer for about 10 minutes then serve up with previously boiled rice. Accompany with reconstituted elderflower juice, followed by half a bar of chocolate (any sort). |
